Well the Lemon & Dill chicken turned out pretty amazing :) I was really proud of how good it was haha even my picky husband liked it and he doesn't really like mushrooms :P
Now I have to see what my next culinary adventure will be..hmmm when I can think of something I'll post it up.
In the mean time here is the recipe for the Lemon & Dill chicken
4 Chiken Breasts
4 tbsp paprika
3 cups + 2 tsbp flour
1 lb shitake mushrooms(any mushrooms will do.)
3 tbsp dill
3 tbsp basil
1 medium size red onion
1/2 c shallots
1/2 c parsley
2 lemons
2 sticks of butter
3-5 cups chicken stock
1 packet of spaghetti or any type of pasta
First you need to thin out the chicken breasts and flaten them,
then you need to season the 3 cups of flour with salt,pepper and the paprika.
Cover the chiken with flour and fry with butter.(Use as much butter as you want.)Set aside.Cook the pasta according to the instructions on the package.
For the sauce chop the onions,shallots,parsley,dill and the basil.Slice mushrooms,zest the lemons and squeeze the juice from one.
Melt about 2 tbsp of butter and sautee the red onions,add shallots,then add the sliced mushrooms.
Add the parsley,dill and basil,let cook for about 3 minutes then add 3 cups of chicken stock,then add the lemon juice and zest.let it simmer and then add the 2 tablespoons of flour gradually so they do not form lumps,add more liquid if needed,the consistency shoul be a bit thick.
On a plate put the pasta,the sauce on top of that, the chicken goes last with a bit of sauce on top and voila! dinner is served! :)
